2 cups organic grits 4 cups veggie broth 2 cups oil free spaghetti sauce 1/2 cup vegan parmesan (see note) Bring veggie broth and spaghetti sauce to a boil, slowly stir in grits, simmer stirring often until nice and thick (maybe 15-20 minutes). Add parmesan. Pour into 8x8 non-stick pan or spray with non-stick spray. Refrigerate 3+ hours. Slice to about 3/4 inch and bake @430 for about 30 minutes. Vegan Challah
Vegan Challah 3 cups whole wheat flour
3 cups unbleached white flour
1 1/2 tbls yeast
1 tbls Neat egg or egg replacer
1/3 cup maple syrup
1 tbls Himalayan salt
Sesame seeds to sprinkle on top Follow standard yeast bread rising format. Divide equally into six pieces. Roll each piece to a little over a foot long. Braid 3 pieces, pinching them together at the top and bottom. Sprinkle generously with sesame seeds. Let this rise 45(ish) minutes. Bake at 375 for about 20 minutes. P

Simit Recipe 1 1/3 cup soy milk or nut milk
1 1/3 cup water
3 cups organic whole wheat flour
3 cups unbleached organic white flour
6 Tbls unbleached organic sugar
4 1/2 tsp yeast
1 Tbls Himalayan salt Mulberry molasses to dip
Sesame seeds to cover *Follow standard yeast rising method for bread dough.
*Divide evenly into 12 pieces. Roll each piece to about 6 inches. Twist well and stick ends together to create a circle.

Broccoli Rabe & White Bean pizza
1 bunch fresh broccoli rabe (rapini)
1 15oz. can or 1 1/2 cup navy beans
3 cloves garlic Salt & pepper to taste ( I used 1tsp. salt & no pepper) Coarsely chop one bunch of broccoli rabe, then add to boiling salt water for about 10 minutes. Set aside. Sauté 3 cloves chopped garlic in 1/4 cup veggie broth until fragrant. Add 1 can navy beans (drained & rinsed) along with salt and pepper to taste. Add broccoli rabe. BAM, It’s ready to go on your pizza crust. Bake about 20 minute
