Getting older and turning gray? It's actually kind of nice!

Basketball is big with my husband and kids. That means tournaments! I always pack a huge cooler with healthy food and lots of ice to last a whole weekend. It's very difficult to find healthy food on the fly.

… a.k.a., explore outside my comfort zone. The older I get, the more I realize there is so much I don’t know—and should.

Lately, I’ve been on a mission to read and watch things I’m totally not interested in, like technology and finances. Yuck.

Why? Because every time I learn something new, the world looks a little different—and I like that.

I've also started adding my least favorite exercise...

1. Mobility: You can put them in any room you're in—they’re not attached to anything!

2. Side Perks: Stabilizer muscles kick in to help you control the weights, meaning you inevitably work

One thing that’s really special about my husband is that he pays no attention to my weight. Around the time I’d had my third child, I was new to eating plant-based and wasn't sure how the extra 40 pounds of baby weight would come off. After all, I was in my 30's then, and this was my third BIG weight gain! My husband could tell it was concerning me, and he just said, "Barb, why don’t you instead focus just on being healthy? Yo...

My child told me, “Mom, I don’t like broccoli.”

I responded with a smile, “Just eat five bites, because you’re 5.”

One of my clients once said to me, “Barb, I don’t like vegetables—never have.”

I responded with concern. “So, that means you’re off the hook?”

Believe it or not, I get it. Me, I hate spinach. It’s okay cooked, but fresh? It’s thick, leathery, and super green tasting. I have spent my whole life avoiding it. Bleckkk.

As a mom of five, I love making dinners that are inexpensive, healthy, quick, and simple! Recipe-free meals meet all of the above criteria and make dinner a cinch. Here are some of my favorites:

Beans & rice with organic green beans. We love black-eyed peas served over organic brown rice. First, soak a whole bag of beans overnight. In the morning, drain the beans and add them to a crockpot along with 4+ cups veggie broth, 1 cho...

  • A. Should you feel bad?

  • B. When your kids grow up will they go crazy and just eat junk because you denied them?

I can only answer this by my experience. When I was growing up, no food was off limits. The only thing I remember being forced to eat was an occasional vegetable at dinner. I learned to love: pop, bread, chips, french fries, cheese on everything and most of all candy and chocolate.

When I became old enou...
